What is the reason for the "yellow" cap of enoki mushroom?

In the production of enoki mushroom in bottles, sometimes the caps will turn yellow, which will be very obvious after the caps turn yellow, which will seriously affect the later shelf life and sales.
The cap of enoki mushroom turns yellow. There are actually two situations, one is "dry" yellow, and the other is "wet" yellow.
1. "Dry" yellow
"Dry" yellow is a physiological disease of enoki mushroom.
During the primordium differentiation stage and young mushroom stage, the ambient humidity is too low, or the cap is dried by cold wind for a long time, causing the whole mushroom cap to turn yellow. With the growth of the cap in the later stage, the yellowing part will be relatively smaller, but it may also be kept until harvesting.
2. "Wet" yellow
"Wet" yellow is a pathological disease of enoki mushroom.
During the whole fruiting stage, due to the high humidity in the fruiting room, local bacterial infection of the cap of enoki mushroom results in local bacterial infection, the color turns yellow, and when it is mild, it is a yellow spot, also called rust spot disease. In severe cases, the yellowed part or the whole mushroom cap rots and secretes viscous liquid.
It can be seen that the causes of "dry" yellow and "wet" yellow are not only different, but also completely opposite.
This requires mushrooming technicians to carefully observe the changes in dryness and humidity of enoki mushroom mushroom caps at different humidity levels in different periods, and adjust the humidity in a timely and predictable manner, instead of only focusing on the relative humidity value of the mushroom house.
